Peanut Dragon Noodles with Chicken and Vegetables
Ingredients
4-8 boneless, skinless chicken thighs (trim fat and cut into small pieces)
1 green bell pepper (diced)
1 red bell pepper (diced)
1-3 carrots (julienned)
1-2 small zucchini (diced)
2-4 Tbsp of oil for frying
½-¾ cup roasted peanuts (½ cup goes in the recipe, the rest for topping)
Green onion (sliced for topping)
6 packages ramen
Sauce
½ cup soy sauce
½ cup brown sugar
¼ cup chili garlic sauce
Directions
Mix sauce ingredients and set aside.
Cut vegetables and set aside.
Cut chicken and set aside.
Stir-fry vegetables in 1-2 Tbsp oil over med-high heat until crisp tender. Then, set aside.
Stir-fry chicken in 1-2 Tbsp oil over med-high heat until cooked through.
Add peanuts and sauce to the chicken and let the sauce cook down over med heat while you cook the ramen.
Cook the ramen and drain.
Add the vegetables and ramen to the chicken mixture and stir.
Top with green onion and more peanuts if desired.
