Lentil Stew

Ingredients
- 1/4 cup margarine
- 3/4 cup chopped celery
- 3/4 cup chopped onion
- 2 cloves of minced garlic
- 6 cups of liquid (water or mix of vegetable stock
- 3/4 cup lentils
- 1/2 cup sliced carrots.
- 1-28 oz can chopped tomatoes
- 3/4 cup brown rice
- 2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp rosemary
Directions
- Saute in large pot: margarine, celery, onion, minced garlic.
- After the veggies soften, add liquid (water or mix of vegetable stock), lentils, sliced carrots.
- Bring to a simmer and cook for 20 minutes
- Then add 1-28 oz can chopped tomatoes, 3/4 cup brown rice, seasonings
- Bring back to a simmer and cook 45 - 60 minutes
