 Lentil Stew

Ingredients

  • 1/4 cup margarine
  • 3/4 cup chopped celery
  • 3/4 cup chopped onion
  • 2 cloves of minced garlic
  • 6 cups of liquid (water or mix of vegetable stock
  • 3/4 cup lentils
  • 1/2 cup sliced carrots.
  • 1-28 oz can chopped tomatoes
  • 3/4 cup brown rice
  • 2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp rosemary

Directions

  1. Saute in large pot: margarine, celery, onion, minced garlic.
  2. After the veggies soften, add liquid (water or mix of vegetable stock),  lentils, sliced carrots.
  3. Bring to a simmer and cook for 20 minutes
  4. Then add 1-28 oz can chopped tomatoes, 3/4 cup brown rice, seasonings
  5. Bring back to a simmer and cook 45 - 60 minutes
