Fried Rice
This is a great meal for using up leftovers in the refrigerator. You can add almost anything. Don’t be afraid to be creative.
Ingredients
Cooked Rice (at least 2 cups)
Vegetables (corn, peas, carrots, green beans, onion)
A bag of frozen mixed veggies works well here too
Scrambled eggs
Directions
Warm a pan on medium heat, or slightly above
Cut onion into small chunks, cook in hot oil until beginning to brown
Add veggies, cook until warm and soft.
Add cooked rice. (i like to cook this mixture until the rice starts getting a bit crispy.)
When the mixture is cooked through, make a hole in the middle by pushing the mixture to the edges, and add several eggs in the hole. Scramble the eggs, then mix them into the rest of the rice mixture.
Soy sauce is always a family favorite over fried rice!
Variations
This is a great way to use up leftovers for CORN (Clean Out Refrigerator Night)
If you add eggs, add them last, so they don’t overcook
Water Chestnuts add a nice crunch
