Hacienda Rice

From the cookbook of Grandma Joyce


Ingredients

  • 4 cups cooked rice

  • 2 cans tomato sauce with bits (or crushed)

  • ½ chopped onion

  • 2 cups sour cream

  • 1 can diced green chilis

  • 2 cups jack cheese


Directions

  • Combine rice, tomato and onion in bowl. 

  • Mix chilies and sour cream in a separate bowl. 

  • Spoon half of the rice mixture into a casserole dish, and top with half of the sour cream mix. Sprinkle with half of the cheese. Repeat the layers.

  • Bake covered at 350 for 45 minutes

    • You can remove the cover for the final 5 minutes for a crispier top.
