Hacienda Rice
From the cookbook of Grandma Joyce
Ingredients
4 cups cooked rice
2 cans tomato sauce with bits (or crushed)
½ chopped onion
2 cups sour cream
1 can diced green chilis
2 cups jack cheese
Directions
Combine rice, tomato and onion in bowl.
Mix chilies and sour cream in a separate bowl.
Spoon half of the rice mixture into a casserole dish, and top with half of the sour cream mix. Sprinkle with half of the cheese. Repeat the layers.
Bake covered at 350 for 45 minutes
You can remove the cover for the final 5 minutes for a crispier top.
