 Roasted Sausage and Veggies


This meal can be very versatile with your choice of vegetables and sausage to include. I usually stick with 3-5 veggies, and 1 type of sausage, but you can experiment with this.

Ingredients (your choice of)

  • carrots
  • Brussel sprouts
  • sweet potatoes
  • butternut squash
  • broccoli
  • cauliflower
  • bell pepper
  • asparagus
  • sausage (usually links, cut into chunks)
Directions
  • cut veggies and sausage into small, bite sized pieces. 
  • Toss with olive oil, salt and pepper, and other spices such as thyme and rosemary.
  • Tough root veggies like squash, sweet potato might need a bit longer in the oven.
  • roast in the oven at 400F for about 20 minutes.
