Roasted Sausage and Veggies
This meal can be very versatile with your choice of vegetables and sausage to include. I usually stick with 3-5 veggies, and 1 type of sausage, but you can experiment with this.
- carrots
- Brussel sprouts
- sweet potatoes
- butternut squash
- broccoli
- cauliflower
- bell pepper
- asparagus
- sausage (usually links, cut into chunks)
Directions
- cut veggies and sausage into small, bite sized pieces.
- Toss with olive oil, salt and pepper, and other spices such as thyme and rosemary.
- Tough root veggies like squash, sweet potato might need a bit longer in the oven.
- roast in the oven at 400F for about 20 minutes.
