Hash Browns
Ingredients
Potatoes (raw or cooked)
Onion (yellow or white)
Bell peppers (optional)
Lowry's Seasoning (optional)
Raw vs. Cooked
If you use raw potatoes, you will need to cook them in a pan with a lid, so that the steam can help cook them. This will take a few minutes longer to cook than if you use cooked potatoes. You can cook potatoes ahead of time by either boiling, baking, or microwaving. You know they are cooked when a knife or fork easily goes into the potato. Using cooked potatoes will make cooking hash browns faster. If you shred a raw potato, rinse the shreds in water to remove extra starch.
Directions
Warm a pan on medium heat, or slightly above
Cut onion into small chunks, cook in hot oil until beginning to brown
While onions are cooking, cut potatoes into cubes or shred using a grater. (The smaller the piece, the faster it will cook.)
You can add bell peppers with the potatoes if you like.
Turn potatoes frequently to avoid burning.
Hash browns go well with eggs for breakfast.
Variations
You can add meat, such as sausage, bacon or ham. You may also top with cheese or sour cream.
