Ingredients
Group 1
- 1 cups heavy cream
- 1 dozen eggs
- 2 tsp garlic
- 2 tsp chili powder
- 2 tsp cumin
- 1 Tbsp salt
- 1 tsp pepper
Group 2
- cooked sausage (2 lbs)
- 1/2 cup diced onions
- 1/3 cup diced red pepper
- 1 can drained black beans
- 4 cups shredded cheese (cheddar)
- large tortillas
- hash brown patties
Directions
- Whisk together group 1 in bowl
- mix group 2 in mixer
- pour into 9 x 13 greased pan
- bake uncovered at 325 for 30 minutes
- cool
Then cut casserole into 16 equal pieces. Place 1 piece of casserole with 1/2 hash brown patty on tortilla. Add salsa if desired. Wrap tortilla.
Makes 16 burritos. Freeze in sandwich baggie. Defrost in fridge a day before needed. Microwave for 1 minute. I like to put in air fryer after microwaving to crisp the tortilla.
