Breakfast Burritos

 Ingredients

Group 1

  • 1 cups heavy cream
  • 1 dozen eggs
  • 2 tsp garlic
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 Tbsp salt
  • 1 tsp pepper
Group 2
  •  cooked sausage (2 lbs)
  • 1/2 cup diced onions
  • 1/3 cup diced red pepper
  • 1 can drained black beans
  • 4 cups shredded cheese (cheddar)
Other ingredients

  • large tortillas
  • hash brown patties

Directions

  1. Whisk together group 1 in bowl
  2. mix group 2 in mixer
  3. pour into 9 x 13 greased pan
  4. bake uncovered at 325 for 30 minutes
  5. cool
Then cut casserole into 16 equal pieces. Place 1 piece of casserole with 1/2 hash brown patty on tortilla. Add salsa if desired. Wrap tortilla. 

Makes 16 burritos. Freeze in sandwich baggie. Defrost in fridge a day before needed. Microwave for 1 minute. I like to put in air fryer after microwaving to crisp the tortilla.
