 Pumpkin Sausage Soup

Ingredients

1 lb Italian sausage ( I like the hot, spicy sausage)
2 cups sliced mushrooms
1 medium onion, diced
4 minced garlic cloves
32 oz chicken stock
1 can pumpkin puree
1 Tbs sugar
1/2 teaspoon cinnamon
2 tsp Italian seasoning
1 tsp tumeric
1/2 tsp ginger
1/2 tsp nutmeg
1/2 cup heavy whipping cream
1/3 cup cold water
1/3 cup cornstarch
2 cups shredded cheddar cheese

Directions

  1. In large saucepan or pot, cook sausage, mushrooms and onion until sausage is cooked and veggies are tender, about 10 minutes. Add garlic, chicken stock, pumpkin, sugar and other spices. Bring to boil, reduce heat. Cover and simmer 10 minutes.
  2. Add cream. Mix cornstarch and water in small container, stir into pan. Bring to a boil and stir until thickened, about 2 minutes. Add cheese, stir until melted.
